Cornmeal Crab Puffs

2 cups cornmeal
2 tablespoons all-purpose flour
1 1/2 teaspoon baking powder
1 teaspoon kosher salt
1/2 lb. lump crab meat picked through for any shells
1/2 finely chopped onion
2 eggs lightly beaten
1 1/2 - 2 cups milk
Oil for frying

1. Prepare dry ingredients in a large bowl.

2. Add the chopped onion and mix till combined.

3. Add the eggs and milk blending till mixed.

4. Gently fold in the crab meat so that the lumps do not break up.

5. Heat a pan with 2 - 3 inches of oil till it sizzles.

6. Drop by heaping teaspoon and fry till lightly brown, about 2 minutes then turnover and fry the other side till lightly brown, about 1 minute.

7. Drain on paper towel and serve warm with cocktail sauce of ketchup and horseradish.

Yield: 4 servings. Recipe is easily doubled, tripled, etc.
