Hummus

chickpeas
tahini
garlic
cumin or pimenton (smoked paprika)
olive oil
lemon juice
salt & pepper to taste

Mix FOUR parts well-cooked or canned chickpeas with One part tahini, along with some of its oil, in a food processor.

Add garlic and cumin (or pimenton) sparingly and purée, adding as much olive oil as needed. Add more garlic and cumin to taste.

Stir in lemon juice, salt and pepper to taste. Sample before adding more lemon juice.

Garnish with olive oil and pimentón.
