Apple Cream Coffee Cake

1/2 cup chopped walnuts
2 teaspoons ground cinnamon
1-1/2 cups sugar
1/2 cup butter
2 eggs
3 cups flour
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup sour cream or yogurt
1 medium tart apple, sliced

1. Preheat oven to 375 degrees.

2. Butter a 9-inch springform pan.

3. In a small bowl mix nuts, cinnamon and 1/2 cup of sugar and set aside.

4. In a large bowl cream the butter and add the remaining sugar. Mix well.

5. Beat in eggs and vanilla.

6. In separate bowl measure flour, soda, salt, and baking powder.

7. Beat dry ingredients into butter mixture, alternating with sour cream or yogurt.

8. Spread half the batter into a greased 9-inch springform pan.

9. Top with apple slices and half of walnut mixture.

10. Bake at 375 oven for 40 minutes.

11. Cool before serving.

Yield: 6-8 servings
