Italiano Apple Cake

Time to Prepare: 1-1/2 hours1 stick butter (4 ounces) + more for greasing pan
1/2 cup flour, + more for pan
2 eggs
1 cup sugar
1 vanilla bean
3-4 small to medium Granny Smith apples
2 teaspoons baking powder
1/2 cup milk at room temperature
Powdered sugar1. Preheat oven to 375 degrees.
2. Line 8-inch square pan with foil, then smear with thick layer of butter and dust with flour. Turn pan over, and tap lightly to remove excess flour.
3. Melt butter in small saucepan. Set aside.
4. Beat together eggs and half of sugar in a bowl.
5. Continue to beat while slowly adding remaining sugar until thick; it should form a ribbon when dropped from spoon.
6. Split vanilla bean in two, lengthwise.
7. Scrape seeds into the egg-sugar batter and add pod to melted butter.
8. Peel, quarter and core apples, then trim ends and slice thinly.
9. Remove vanilla pod from butter and stir butter into sugar-egg batter.
10.Combine 1/2-cup flour and baking powder, then stir it into batter alternating with milk.
11.Stir in apples, coating every piece with butter.
12.Pour batter into pan, using fingers to pat top evenly.
13.Bake for 25 minutes, then rotate the pan; bake for about 25 minutes more, until cake pulls away from pan and is brown on top.
14.Cool 30 minutes, then cut lengthwise and sprinkle slices with powdered sugar.
Yield: 6-8 servings.
Substitutions:
If you prefer another kind of apple, go for it.
Fat-free milk works fine.Commentary: If this seems too hard to make and it isn't hard at all... pay someone to make it with you. This dessert needs to be tested before making it for company. I tested it several times... before finally allowing anyone else to sample... er... enjoy it. It is simply divine! This cake goes well with wine and is best eaten slowly so as to savor every delicious bite.
