Chinese Beef w/Noodles

Skill required: Beginner 1/2 lb. fine noodles.
3 tablespoons oil
1 lb. ground beef
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup sliced scallions
1 clove garlic, minced
1 cup canned bean sprouts
1 tablespoon sugar
1 cup beef broth
2 teaspoons cornstarch
2 tablespoons water1. Cook noodles as directed on package.
2. Drain and rinse under cold water, then place in refrigerator to chill.
3. Heat oil in wok.
4. Brown meat in oil, stirring frequently to keep from burning.
5. Add salt, pepper, garlic, bean sprouts, sugar and broth and bring to boil.
6. Mix together cornstarch and water.
7. Stir mixture into wok until thickened.
8. Add noodles and heat.
9. Sprinkle with scallions and serve.
Yield: 2 servings
