Orange Beef & Broccoli Stir-Fry

Skill required: Confident Beginner 1 1/2 pounds beef skirt steak or flank steak
1 cup orange marmalade
1/4 cup hoisin sauce
3 tablespoons teriyaki sauce
2 tablespoons soy sauce
1 tablespoon minced fresh garlic
12 ounces fresh broccoli florets1. Trim fat from meat. Thinly slice meat across the grain into bite-size strips.
2. In a large bowl, toss together beef strips, marmalade, hoisin sauce, teriyaki sauce, soy sauce and garlic.
3. In a medium saucepan, cook broccoli in boiling water 5 - 6 minutes, until crispy tender; drain and cool.
4. Preheat a wok or large non-stick skillet over high heat.
5. Add meat mixture to hot wok.
6. Stir-fry 4 - 6 minutes.
7. Add cooked broccoli, heat through.
Serve with steamed rice.
Yield: 8 servings
