Beef Stew

Skill required: Beginner 1 lb stew meat
1 sweet yellow onion chopped into large pieces
6 cloves of garlic chopped
1 tablespoon olive oil
1 can diced tomatoes
1-2 teaspoon dried thyme
Salt and pepper to taste
1 bay leaf
1 teaspoon garlic powder
6 cups of beef stock
1 cup diced carrots
1/2 cup diced celery
1 cup diced baby red potatoes (skin on)1. Preheat oven to 250 degrees (you can also use stove top or crock-pot).
2. In large cast iron (or baking pot) heat olive oil.
3. Add stew meat and onion and cook for about 5 minutes.
4. Add garlic and cook for 30 seconds before adding tomatoes, seasonings and stock.
5. Cover and cook in the oven (on stove top or in crock-pot) for at least 4 hours.
6. Remove pot from oven; place on stove top over medium heat.
7. Add vegetables to the stew and add more beef broth if low.
8. Taste and add seasonings if needed.
9. Cover and cook for 1 1/2 - 2 hours.
Yield: 4 servings. Recipe is easily doubled, tripled.
