Peanut Butter Biscotti

2 3/4 cup all-purpose flour
1 3/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
3 eggs, beaten
1/3 cup peanut butter
1/4 cup water
1 1/4 cups roasted peanuts, unsalted1. Preheat oven to 350 degrees F.
2. Lightly grease cookie sheet; set aside
3. In a large bowl, whisk together the flour, sugar, baking powder, and salt; set aside.
4. In a medium bowl, beat eggs, peanut butter and water together.
5. Stir egg mixture into flour mixture until just combined. Additional teaspoons of water can be added if dough is dry.
6. Stir in peanuts.
7. Divide dough into two portions, and form each into a log approximately 3 inches in diameter.
8. Place the logs 3 – 4 inches apart on the prepared cookie sheet. Flatten each log slightly.
9. Bake for 40 minutes or until light brown.
10.Cool for 1 hour.
11.Preheat oven to 300 degrees F.
12.With a sharp knife cut each log diagonally into 1/2-inch slices.
13.Arrange slices cut side down on cookie sheet.
14.Bake for 12 minutes.
15.Remove from oven and turn slices over and bake for an additional 12 minutes.
Yield: 30 biscotti
