Spoon Bread

1 Cup boiling water
1/2 Cup cornmeal
1/2 Cup skim milk
1/2 teaspoon salt
1-1/2 teaspoon baking soda
1 Tablespoon Baking powder
1 Tablespoon Corn oil
2 eggs, separated
corn oil spray

1. Preheat oven to 375 degrees.

2. Coat 1-1/2 quart casserole dish with corn oil spray.

3. Pour boiling water over cornmeal. Stir until smooth.

4. Beat in remaining ingredients, except egg whites.

5. Beat egg whites until stiff. Fold into mixture.

6. Pour into prepared dish.

7. Bake 25 to 30 minutes until set.

8. Spoon into serving dishes.

Yield: 6 servings (3 cups)
