Sweet Half-and-Half Challah

Skill required: Know your way around a kitchen. 2 ounces yeast
4 eggs
2 cups warm water
4 cups whole-wheat flour
1 cup honey
5-6 cups white flour
3/4 cup oil1. Mix together yeast, water, honey, oil, and eggs.
2. Sift both flours together and add.
3. Knead until dough does not stick to fingers.
4. Cover dough with a damp cloth and let rise in a warm place for 2 hours.
5. Separate challah, if necessary.
6. Divide the dough into 6 balls.
7. Divide each ball into thirds and braid.
8. Let rise for 1 hour.
9. Preheat oven to 350 degrees.
10.Bake for 30-45 minutes. Do not overbake.
Yield: 6 loaves.
