Apricot Morning Muffins

Muffins:
2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1/4 cup butter - after batter is mixed, taste. If tastes dry, add 1-2 tablespoons more butter
1/2 cup apple juice
1 10oz jar Apricot spreadable fruit (ie., Smuckers)
1/2 teaspoon vanilla extract
1 egg

Topping:
3/4 cup sugar
1/2 cup oatmeal
1 teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon plus 1 teaspoon melted butter
1/4 teaspoon salt

1. Preheat oven to 375 degrees.

2. Spray muffin pan with cooking spray or use cupcake cups.

3. Sift together flour, sugar, and baking powder in a mixing bowl. Use a pastry cutter or two knivies to mix in butter.

4. Mix apricot fruit, apple juice, and vanilla in a separate bowl and pour into dry ingredients.

5. Beat egg and pour into the bowl.

6. Mix all ingredients together gently, careful not to over mix or muffins will be tough.

7. In a small bowl, mix topping ingredients.

8. Fill muffin pans with batter. Sprinkle 1 heaping teaspoon of topping ingredients over each muffin.

9. Bake for 15 to 18 minutes until done. Remove from pan and cool on wire rack.

Yield: 20 muffins
