Basic Crepes

2 eggs
1//2 cup all-purpose flour
1/4 cup milk
1/4 cup water
1 tablespoon butter, melted
1 teaspoon sugar
1/4 teaspoon salt
1. Measure all ingredients into mixer bowl.
2. Beat until smooth. Batter will be thin.
3. Pour scant 1/4 cup batter into lightly greased 8-inch crepe pan or skillet.
4. Tilt pan to coat bottom evenly with batter.
5. Cook over medium heat until brown. Turn to brown other side.
6. Let pan cool slightly between crepes - 1-2 minutes.
7. Spoon filling onto center of crepes and roll.
If you wish to freeze crepes, make several batches at a time.
To freeze: Layer crepes in aluminum foil and wrap in aluminum foil. Date, label and freeze.
To heat, place wrapped crepes on baking sheet. Bake in 325 degree oven until hot - about 12-15 minutes.
Yield for one batch: 8 - 9 crepes
