Date & Nut Bread

1 cup raisins
1 teaspoon baking soda
1 cup boiling water

STOP!!!!!

DISSOLVE THE BAKING SODA IN THE BOILING WATER AND SOAK THE RAISINS FOR HALF AN HOUR.

1 tablespoon shortening
3/4 cup sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon cocoa
1 3/4 cup flour
1/2 cup chopped nuts

1. Preheat oven to 350 degrees.

2. Cream shortening with sugar.

3. Add egg, vanilla, cocoa, and the raisins mixture.

4. Blend in flour, add the nuts.

5. Place the batter in a 5 x 9 loaf pan

6. Bake for 45 Minutes.

7. Cool before cutting and serve warm.

Raisins have been substituted for dates but I still call it Date nut bread. If you use dates, cut sugar back to 1/2 cup.

Cream cheese is delicious on this bread.
