Apricot Blondies

Skill required: Beginner 1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 1/4 sticks unsalted butter, softened
1 cup light brown sugar
2 teaspoons vanilla extract
2 large eggs
1 cup dried apricot halves, chopped
1/2 cup roasted almonds, chopped1. Preheat oven to 325 F. Butter an 8-inch square baking pan.
2. In a medium-sized bowl, sift together flour, baking powder, baking soda, salt, and pepper.
3. In a separate bowl, with a hand-held mixer or spatula, cream butter, brown sugar, and vanilla until well-combined.
4. Beat in egg until mixture is smooth.
5. Add flour mixture in 3 stages until a dough forms.
6. Mix in apricot and almonds.
7. Scrape dough into prepared baking pan and even out the top with a spatula.
8. Bake for 45 minutes, or until the top is golden brown and a toothpick inserted comes out clean. Allow to cool complete, then slice into squares.
Yield: 16 - 20 pieces
