Bourbon Celebration Brownies

1/2 cup (1 stick) butter
1 cup sugar
2 teaspoons vanilla extract
1/4 cup bourbon
4 ounces unsweetened chocolate, chopped
2 eggs
2/3 cups flour (whole wheat pastry is great)
1/4 teaspoon salt
1/2 teaspoon cinnamon

1. In a medium saucepan, melt butter with sugar.

2. Cook for a few minutes, until boiling, stirring with a rubber spatula every 15 seconds or so.

3. Cook like this until mixture is uniformly foamy, and the edges are just barely beginning to brown. Remove from heat and stir, scraping sides of pan.

4. Add vanilla and bourbon, and stir to combine, being very careful not to splash yourself with the hot mixture. Batter will look a bit broken at this point, but continue stirring until liquids are incorporated.

5. Add chopped chocolate and stir until completely melted.

6. Add eggs one at a time, beating well after each addition.

7. Add flour, salt, and cinnamon, and mix vigorously for several seconds, until batter is completely mixed, slightly thickened, and shiny.

8. Pour into a greased 8x8 pan, and bake at 350 degrees F until completely dry on top and edges are just starting to pull away from sides of the pan, about 20-25 minutes.

9. Let cool and devour.
