Banana Peanut Butter Loaf

Time to prepare: 15 minutes prep + 90 minutes baking
Skill required: Beginner6 tablespoons (3/4 stick) unsalted butter
1/3 cup crunchy peanut butter
1 cup granulated sugar (table sugar)
2 eggs
3 bananas sliced (about 2 cups)
1 teaspoon baking soda
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup chopped salted peanuts1. Grease a 9 x 5-inch loaf pan and set aside.
2. Cream the butter and peanut butter together with the sugar.
3. Mix in eggs, bananas, baking soda, flour, salt and nuts.
4. Pour into greased pan.
5. Place in COLD oven.
6. Set oven to 300 degrees F. and bake for about 90 minutes or until loaf tests done. (Toothpick in center to make sure batter is not wet.)
7. Cool for 5 minutes in pan on a rack, then unmold and let cool completely, right side up.
Yields: one 9-by-5-inch loaf
Good with cream cheese spread on it.
GREAT with jam spread on top.
