Macaroni & Cheese

Skill required: Confident Beginner 3 tablespoons butter
3 tablespoons flour
2 cups milk, warmed
1 1/2 pounds elbow macaroni, cooked
1 pound sharp cheddar cheese, grated
1 pound monterey jack cheese, grated
1. Preheat oven to 350 degrees.
2. In small sauce pan, melt butter.
3. Add flour and whisk together to lightly cook flour.
4. Add milk and whisk until smooth and slightly thickened.
5. When thickened, add 3/4 of each of the 2 cheeses.
6. Mix well and place in large casserole dish. Top with remaining cheese.
7. Bake at 350 degrees for 20 minutes.
