Cheesecake Pie

Skill required: Love cheesecake? That's all you need

1 1/4 cups plain OR cinnamon graham cracker crumbs
1/4 cup butter - melted
1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 tablespoon lemon juice
Dash salt
2 eggs
1 cup dairy sour cream
2 tablespoons sugar
1/2 teaspoon vanilla

1. Mix crumbs and butter.

2. Press into buttered 8-inch pie plate, building up sides.

3. Pre-Heat oven to 325 degrees F.

4. To make filling, In a medium bowl, beat cream cheese until fluffy.

5. Gradually blend in 1/2 cup sugar, the lemon juice, vanilla and salt.

6. Add eggs, one at a time, beating well after each addition.

7. Pour into crumb crust.

8. Bake 25-30 minutes or until set.

9. Combine remaining ingredients and spoon atop pie.

10.Bake 10 minutes more.

11.Cook, then chill several hours.

Serve with sweetened strawberries or raspberry sauce.
