Sour Cream Cheesecake

Prepared graham cracker crust
5 packages (8-ounce size) soft cream cheese
1 3/4 cups sugar
3 tablespoons flour
1 tablespoon grated lemon peel
1/4 teaspoon vanilla extract
5 eggs
2 egg yolks
1/4 cup heavy cream
1/2 cup dairy sour cream

1. Preheat oven to 500 degrees F.

2. In large bowl of electric mixer, combine cream cheese, sugar, flour, lemon peel, and vanilla. Beat at high speed just to blend.

3. Beat in eggs and egg yolks, one at a time.

4. Add cream, beating just until well combined. Pour into prepared crust.

5. Bake 10 minutes.

6. Reduce oven temperature to 250 degrees and bake 1 hour longer..

7. Spread top with sour cream.

8. Let cool in pan on wire rack. Refrigerate 3 hours or overnight.

Yield: 16 - 20 servings
