Cherry Coconut Bars

Skill required: Experienced Beginner

Crust:
1 cup sifted flour
1/2 cup butter
3 tablespoons confectioner's sugar

1. Preheat oven to 350 degrees F.

2. In medium bowl, mix all ingredients well.

3. Pat firmly in ungreased 8" x 8"-inch baking pan.

4. Bake 20 minutes. Do NOT brown.

Topping:
2 eggs, beaten
1/4 cup flour
1 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1/2 - 3/4 cup chopped nuts
1/2 cup coconut
1/2 cup cut cherries

1. Combine all topping ingredients.

2. When pastry crust is baked, pour topping mixture over crust. It's not necessary to cool the pastry first.

3. Bake again at 350 degrees for 25 minutes.

8. Remove from oven and cool in pan.

9. Cut into 1 or 2-inch bars.

Yield: 16 - 24 bars
