Chinese Chews

Preheat oven to 375 degrees F.

Have ready a 9 x 13 x 2 inch square baking pan that has been well greased or buttered.

3/4 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1 cup dates, finely chopped
1 cup nuts, finely minced
2 eggs, well beaten

1. In a medium bowl combine flour, baking powder, salt and sugar.

2. Add dates and nuts. Mix well.

3. Mix in eggs and beat batter until smooth.

4. Spread batter thin as possible in prepared pan.

5. Bake for 15 minutes until dry on top.

6. While warm, cut baked batter into 2-inch bars and roll each bar into tubes or balls. (Wear plastic gloves if necessary; batter can burn your fingers but you can't do this when batter cools.)

7. Roll each roll/ball in confectioner's sugar.

Variation: Bake at 350 degrees for 30 minutes and roll balls in granulated sugar. I bake 2 batches and serve both kinds at the same time. They are always a big hit and consumed quickly.

Yield: 24 - 36 chews
