Coffee Bars

Skill Required: Confident Beginner 1 1/2 cups sifted all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup butter
1 cup brown sugar, firmly packed
1 egg
1/2 teaspoon vanilla
1 tablespoon instant coffee powder
1/2 cup water
1/2 cup seedless raisins
1/4 cup chopped nuts1. Preheat oven to 350 degrees F.
2. Butter and flour a 15 1/2 x 10 1/2 x 1 inch pan.
3. Sift together flour, baking powder, baking soda, cinnamon and salt.
4. Work butter in a bowl until creamy.
5. Add sugar and beat well.
6. Add egg and vanilla; beat until blended.
7. Dissolve coffee powder in water; add to creamed mixture alternately with sifted dry ingredients.
8. Mix well after each addition.
9. Fold in raisins and nuts.
10.Spread in prepared pan.
11.Bake 20 - 25 minutes.
12.Frost with Coffee Frostings (Recipe under "Frostings.")
13.Cool in pan and cut into 1 1/4 x 2 1/2-inch bars.
Yield: 4 dozen bars
