Peanut Butter Cupcakes

1 cup packed brown sugar
1/2 cup creamy peanut butter
1/4 cup butter, softened
2 large eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup milk
1 (6 ounce) package semisweet chocolate chips (1 cup) or 3/4 cup jam

1. Preheat oven to 350 degrees F.

2. Cream brown sugar, peanut butter and butter.

3. Beat in eggs and vanilla.

4. Mix flour, baking powder and 1/2 teaspoon salt.

5. Add to creamed mixture alternately with milk, mixing till blended.

6. Spoon a rounded tablespoonful of batter into greased muffin pans or paper bake cups in muffin pans.

7. Place 10 to 12 chocolate pieces or 2 teaspoons jam in center of each spoonful of batter.

8. Top with a second tablespoonful of batter.

9. Bake about 25 minutes or till done.

Yield: 18 cupcakes
