Raspberry & Oatmeal Swirls

Time to prepare: 15 minutes 2 cups fresh raspberries (or 12-ounce bag of the frozen stuff - tsk)
4 teaspoons confectioners' sugar (powdered sugar)
2 cups whole milk yogurt
1/2-cup oatmeal cookie crumbs (from crumbled cookies, of course)1. Set aside six goblets - 3/4 cup capacity
2. In a food processor or blender, combine berries and sugar and purée for 2-3 minutes to make a smooth thick sauce.
3. Spoon about 2 teaspoons raspberry purée into each goblet and top with about 2 tablespoons yogurt.
4. Sprinkle with a layer of cookie crumbs.
5. Make another layer of 2 tablespoons yogurt and top with 2 teaspoons purée.
6. Serve or... cover with plastic wrap and refrigerate. When serving, top each serving with a final layer of cookie crumbs.
Yields: 6 servings.
Substitutions: Any berries will do. Vanilla yogurt is delish!
Commentary: This is an easy-to-prepare dessert. It's very pretty and makes a good presentation. Ideal for "the boss is coming for dinner and bringing his "we only had sex to conceive the children, thank God, wife." Also a dessert that shows more than adequate effort to placate your spouse when you have to invite folks you barely tolerate. Do NOT share the recipe with them; they have no sense of appreciation.
