Caramel Sauce

Skill required: Beginner 1 1/2 cups sugar
1/2 cup water
1 cup heavy cream
1 teaspoon vanilla extract
1/2 teaspoon salt
3 tablespoons unsalted butter1. Stir together sugar and 1/2 cup water in a medium saucepan over medium-high heat.
2. Bring to boil, stirring constantly.
3. When sugar has dissolved, raise heat to high.
4. Cook, without stirring, until mixture is medium amber - 7 - 8 minutes.
5. Remove from heat.
6. Carefully, stir in cream. It will steam.
7. Stir in vanilla and salt.
8. Let cool 5 minutes.
9. Whisk in butter.
Yield: 2 cups
