Chocolate Glaze

2 oz Unsweetened Chocolate
2 tablespoons Butter
2 Cups Confectioners Sugar
1 teaspoon Vanilla
1/4 Cup Boiling Water (more as needed)

1. Boil water (about 1 cup) and put it aside.

2. Melt chocolate and butter by stirring them in the top of a double boiler over simmering water.. Or put them in a microwave-safe bowl, cover it with wax paper, put the bowl in the microwave and turn the microwave on high for about 1 minute.

3. Pour the hot chocolate/butter mixture into a mixing bowl, add the powdered sugar and vanilla and start to mix them together. It will look dry and crumbly.

4. Add 1/4 cup of boiling water while mixing steadily and the glaze should turn smooth, shiny and pourable. If necessary, add additional hot water, but no more than 1 tablespoon at a time. Use immediately.

5. Pour over cake to cover it. If possible, have cake sitting on a metal cooling rack sitting on a large plate so that the drippings may be saved. This glaze works particularly well with layer cakes and cakes baked in a bundt pan. Let the glaze dry a bit and then transfer the cake to the serving dish with a large metal spatula.

This glaze is also great for dipping the top of cupcakes. Also good for spreading over the top of a pan of chocolate brownies.
