Lemon Frosting

4 ounces Butter (1 stick), room temperature
3 ounces Cream Cheese, room temperature
1 lb box Confectioners Sugar (1 lb. equals approx. 4 Cups)
3 tablespoons Lemon Juice
1 teaspoon Grated Lemon Rind
1 teaspoon Vanilla

1. Beat the butter and cream cheese until they are soft and creamy.

2. Add the other ingredients and beat until the frosting is soft, smooth and creamy. If necessary to make it easily spreadable, add additional milk or water but only 1 tablespoon at a time. If you taste it now and you think it needs a little more lemon, add more lemon juice instead of the milk or water.

Yield: Enough to generously frost an 8" or 9" layer cake. A half recipe will frost a dozen or so cupcakes.
