Fresh Orange Frosting
WOW scale: 8
Skill required: Beginner 4 ounces Butter (1 stick), room temperature
3 ounces Cream Cheese, room temperature
1/4 Cup Orange Juice
2 teaspoons Grated Orange Rind
1 lb. box Confectioners Sugar (1 lb. equals approx. 4 Cups)
1 teaspoon Vanilla1. Beat the butter and cream cheese until soft and creamy.
2. Add the other ingredients and beat until the frosting is soft, smooth and creamy. If necessary to make it easily spreadable, add additional orange juice (or milk or water) but only 1 tablespoon at a time.
Yield: Enough to generously frost an 8" or 9" layer cake. A half recipe will also frost a dozen or so cupcakes.
