Old-Fashioned Fudge

Skill required: Rabid chocoholic

2 cups sugar
2/3 cup milk
2 ounces unsweetened chocolate OR 1/3 cup cocoa
2 tablespoons corn syrup
1/4 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla
1/2 cup chopped nuts - optional

1. Butter 9-by-5-by-3-inch loaf pan.

2. In 2-quart saucepan, mix sugar, milk, chocolate, corn syrup and salt.

3. Cook over medium heat, stirring constantly until chocolate is melted and sugar is dissolved.

4. Cook, stirring occasionally until small amount of mixture dropped into very cold water forms a soft ball which flattens when removed from water.

5. Remove from heat; add butter.

6. Cool mixture without stirring - bottom of pan will be lukewarm.

7. Add vanilla; beat vigorously 5 - 10 minutes with wooden spoon until fudge is thick and no longer glossy.

8. Quickly stir in nuts.

9. Spread mixture evenly in pan.

10.Cool until firm.

11. Cut into 1-inch squares.

Yield: 32 squares.
