Avgolemono (Lemon Chicken Soup)

Skill required: Confident Beginner 4 cups chicken broth
2 whole eggs beaten
1 whole lemon squeezed
3/4 cup orzo dried
1 handful fresh parsley, chopped
1 pinch pepper to taste
1 pinch salt to taste1. Bring the broth to a boil and add the orzo.
2. Cook until the orzo is tender.
3. Take the soup off of the heat.
4. Add the lemon juice to the eggs and beat well.
5. Take a ladel full of the broth and add to the egg/lemon mixture while beating well.
6. Take care the eggs don't curdle, If they do, add an ice cube.
7. Slowly stir the egg/lemon mix into the soup.
8. Add chopped parsley and a little salt and pepper.
Note: You can also make this with a vegetable broth. If you make your own chicken broth, add some of the chicken meat.
Yield: 4 - 6 servings
