Ravani (Semolina Cake)

2 teacups semolina
8 eggs
1 teacup butter
2 teacups sugar
1 teacup blanched and chopped almonds
1 tablespoon cinnamon

Syrup:
3 teacups water
2 teacups sugar
1/2 lemon

1. Beat the butter with the sugar.

2. Add the eggs and continue beating, until frothy.

3. Add the semolina, cinnamon and almonds. Mix them well, until mixture is not lumpy.

4. Spread the mixture evenly in a buttered pan and bake in a medium oven (350 F) for 30 minutes.

5. Then remove the cake from the oven and cut it into square shaped pieces, while it is still in the pan.

6. While cake is baking, prepare the syrup as follows: In a pot, boil the sugar, water and lemon juice for 10 minutes.

7. Pour the syrup, scalding hot, over the cake, while the cake is still lukewarm.
