Honey Cake with Honey Frosting

2 cups sifted cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 cup shortening
1 cup honey
1 egg, well beaten
1/2 cup buttermilk
Honey Frosting

1. Preheat oven to 375 degrees.

2. Grease two 8" inch round layer-cake pans.

3. Sift dry ingredients together.

4. Cream shortening and honey until light and thick.

5. Add the egg in halves, beating thoroughly after each addition.

6. Alternately add the dry ingredients in fourths and the milk in thirds to creamed mixture, beating only until blended after each addition.

7. Turn batter into two prepared 8-inch round layer-cake pans.

8. Bake 25 minutes or until cake test done. Cool before frosting.

9. Fill and frost the cake with Honey Frosting.

Frosting
1 cup honey
2 egg whites
Few grains salt
Bring honey to boiling in a small saucepan over low heat.

1. Add salt to egg whites and beat until stiff, but not dry, peaks are formed.

2. Continue beating and pour the hot honey very slowly in a thin stream into the egg whites.

3. Continue beating 2 - 3 minutes or until frosting forms rounded peaks.
