Prune, Poppy or Jam Hamentaschen

Skill required: Know your way around a kitchen. Prune Filling:
1 lb prunes, stewed 10 minutes, pitted & chopped OR 1 (12 ounces) package pitted prunes
1 cup raisins, chopped
1/2 lemon, juice & rind
1/4 cup bread crumbs
1/2 cup sugar
2 tablespoons honeyCombine all the ingredients, mix thoroughly and set aside.
Hamantaschen:
3 cups flour
1/2 cup finely ground almonds
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup sugar
1 cup butter
3 tablespoons hot water
2 tablespoons cocoa powder
1 egg
1 egg white
1. Preheat oven to 350 degrees. Combine flour, almonds, baking powder, salt and sugar.
2. Blend in butter with electric mixer until mixture resembles very fine crumbs.
3. Blend water and cocoa in small bowl and beat in egg.
Add to flour mixture and beat until mixture begins to form dough. Do not over-mix.
4. Transfer to floured board and knead into ball.
5. Chill 30 minutes for easier handling.
6. Divide into 6 or 7 portions.
7. Flatten each with palm of hands and roll out 1/4 inch thick.
8. Cut into 3-1/2 inch rounds with scalloped cookie cutter. Place 1 teaspoon chocolate filling in center of each round.
9. Fold edges of dough toward center to form triangle, leaving bit of filling visible in center. Pinch edges to seal.
10.Place on lightly greased foil-lined baking sheet and brush with egg white.
11.Bake until firm, about 20 minutes.
12.Transfer to racks to cool
Yield: 60 servings
Poppy seed filling:
1 cup poppy seeds
4 tablespoons honey
2 tablespoons sugar
juice of 1/2 lemon
1 tablespoon butter
1 egg white
Soak the poppy seeds in boiling water overnight. Drain, dry and grind through food chopper, using finest blade. Add remaining ingredients and mix well.
Apricot or Plum or peach filling
1-1/2 cups apricot or plum or peach jam
1/2 cup finely chopped almonds or walnuts
1 teaspoon grated lemon peel
1 tablespoon lemon juice
1/2 cup dry bread crumbsCombine all the ingredients, mix thoroughly and set aside.
