Lemon Ice-Box Pie

Skill required: Beginner8 ounces cream cheese, room temperature
1 can (14 ounce) sweetened condensed milk
1/2 cup fresh lemon juice
3 tablespoons lemon zest
1 teaspoon vanilla extract1. Combine all the ingredients in a large bowl.
2. Mix with an electric mixer on medium speed until smooth.
3. Pour into ready-made pie crust.
4. Refrigerate overnight.
Yields: 8 servings
Substitutions:
*You can also buy ready-made graham cracker crusts - very good with a lemon pie.*There is low-fat and no-fat cream cheese if that will assuage your guilt.
