Apple Nut Cake

Skill required: Successful baker 2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
4 cups chopped, cored, unpeeled apples
1-1/2 cup sugar
1/2 cup oil
2 large eggs, beaten
2 teaspoons vanilla
1 cup chopped nuts
1/2 cup raisins (optional)1. Preheat oven to 350 degrees.
2. Lightly butter a 9"x13" baking pan.
3. Mix flour, baking soda, cinnamon and salt in bowl.
4. Mix apples and sugar in large bowl.
5. Stir in oil and mix well. If batter is too dry, add more oil.
6. Stir in eggs, vanilla and nuts.
7. Add flour mixture and raisins. Stir just until moistened.
8. Scrape into prepared pan.
9. Bake until toothpick inserted in center comes out clean and cake has pulled away from sides of pan - 30-40 minutes.
10. Cool on wire rack.
