Pasta ala Caprese

Skill required: Beginner 8 ounces pasta - any kind
2 cups cherry tomatoes, quartered
2 tablespoons freshly ground black pepper
1 tablespoon salt
1 cup freshly packed basil
2 tablespoons olive oil
4 cloves minced garlic
1/4 cup mozzarella cheese, cubed1. Boil a pot of water with 1 tablespoon salt. Drop the pasta into the boiling water. Continue stirring for the first couple of minutes to avoid the pasta sticking to each other. Cook the pasta al-dente. This will take about 8 - 10 minutes.
2. Put pasta in a big serving plate / bowl.
3. Heat olive oil, saute garlic quickly for 1 minute.
4. Add tomatoes, salt and pepper. Stir constantly.
5. Mash the tomatoes using the spatula. Lower the heat. Cook till the sauce thicken or the tomatoes become mushy. This will take 4 minutes.
6. Pour the sauce into the bowl of pasta and add fresh basil and cheese.
Yield: 2 servings. This recipe is easily doubled, tripled, etc.
