Ginger Peach Streusel Cake

Cake:
2 cups flour
2 cups sliced fresh peaches
3/4 cup sugar
1/4 cup milk
1/4 cup sour cream
1/4 cup butter, at room temperature
2 teaspoons baking powder
3 drops ginger extract*
1/2 teaspoon salt
1 egg, at room temperature

Streusel:
1/4 cup butter, at room temperature
1/2 cup sugar
1/3 cup flour
1 teaspoon ground ginger

1. Preheat the oven to 375 degrees.

2. Butter and flour 1 standard loaf pan or a 8-inch springform pan.

3. In a medium bowl, whisk together 2 cups of flour, baking powder and salt. Set aside.

4. In large mixing bowl, cream together butter and sugar until fluffy.

5. Beat in the egg and ginger extract.

6. In a liquid measuring cup, whisk together the milk and sour cream.

7. Add the flour mixture alternately with the milk to the butter mixture, beginning and ending with flour until a thick dough forms.

8. Carefully fold in sliced peaches.

9. Pour batter into the prepared pan. Set aside.

10.In a small bowl, mix together all of the streusel ingredients until a rough crumb forms.

11.Sprinkle streusel evenly over the raw cake.

12.Bake about 50 minutes or until a toothpick inserted in the center comes out dry.

13.Remove to a wire rack to cool. After about 5 minutes, release the cake from the pan and serve.
