Peaches in Syrup

Skill required: Peach Lover (and lover of Peach lover)

**This is a stand-alone dessert as well as an essential ingredient in "Summer Fruit Cream Pie (in PIE section). If used by itself, pour it over vanilla ice cream. DELISH!**

1 1/2 pounds (about 8 small) ripe peaches, bottoms scored
1 1/2 cups sugar
2 tablespoons fresh lemon juice
Salt

1. Prepare an ice-water bath.

2. Bring a pot ofwater to a boil.

3. Cook peaches, 3 at a time, for 1 minute.

4. Transfer to ice-water bath.

5. Peel, halve and pit peaches.

6. Cut each half into 6 wedges.

7. Bring peaches, sugar, lemon juice and a pinch of salt to a simmer in a medium saucepan over medium heat.

8. Cook, stirring occasionally, until sugar dissolves, about 2 minutes.

9. Transfer to a bowl and let cool completely.

10.Cover and refrigerate overnight.

11.Next day: Prepare an ice-water bath.

12.Transfer peach mixture to a medium saucepan and bring to a boil.

13.Skim foam from surface.

14.Cook, stirring occasionally, until peaches are tender, 8 - 10 minutes.

15.Return peach mixture to the bowl, and let cool in ice-water bath.

16.Use immediately or refrigerate for up to 2 weeks.

Yield: 2 cups
