Fresh Blueberry Pie

1 cup sugar
3 1/2 tablespoons quick-cooking tapioca
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon grated lemon peel
1/16 teaspoon ground cloves
1 tablespoon fresh lemon juice
4 cups fresh blueberries
Pastry for double crust 9-inch pie
2 tablespoons butter

1. Preheat oven to 425 degrees F.

2. Combine sugar, tapioca, cinnamon, salt, lemon peel and cloves.

3. Mix with lemon juice and blueberries.

4. Turn into pastry-lined 9-inch pie plate.

5. Dot with butter.

6. Top with pastry rolled to 1/8-inch thickness.

7. Cut 2 or 3 gashes in top of crust to allow escape of steam.

8. Bake for 40 minutes or until crust is brown.

9. Remove oven; cool before serving.

To serve, top with vanilla ice cream.

Yield: 8 servings
