Egg Custard Pie

9-inch prepared pie crust
4 eggs
1/2 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2-1/2 cups milk
Ground nutmeg (optional)

1. Preheat oven to 425 degrees F.

2. Prepare pie crust as directed and place in a 9-inch pie plate.

3. Bake crust for 5 minutes.

4. In the bowl of an electric mixer beat eggs until lemon colored.

5. Stir in sugar, vanilla extract and salt.

6. Stir in milk gradually. Mix well.

7. Pour into partially baked pie crust. Sprinkle with nutmeg, if desired.

8. Bake for 15 minutes.

9. Reduce oven temperature to 350 degrees F. Bake 20 - 25 minutes or until knife inserted in center comes out clean.

10.Cool to room temperature before serving.

11.Refrigerate leftover pie.

Yield: 8 servings
