Quick & Easy Lemon Pie

3 eggs, room temperature
1/2 cup fresh lemon juice
3 teaspoon lemon zest
1 can (14 ounce) sweetened condensed milk

1. Pre-heat oven to 350 degrees. F.

2. Separate the eggs; beat the egg yolks well.

3. Add the lemon juice and zest to the yolks.

4. Add the sweetened condensed milk.

5. Mix well and pour into prepared or ready-made crust.

6. Bake 12-15 minutes. Cool.

7. Top with whipped cream.

Yields: 8 servings

Substitutions:
*You can also buy ready-made graham cracker crusts - very good with a lemon pie.
