Chinese Fried Rice

2 tablespoons cooking oil
2 cups onion, coarsely chopped
2 cups of cooked rice - cold
2 eggs, beaten
1 tablespoon soy sauce
1/2 teaspoon salt

1. Heat pan on medium flame.

2. Add oil and fry onions until golden brown.

3. Add cold rice and sauté.

4. Add eggs, seasoned with soy sauce and salt.

5. Sauté until done - @ 5 minutes.

For variety, add 1 cup cooked chicken, shredded OR pork, OR small whole shrimp OR chopped green pepper.

Yield: 2 servings
