Skill required: Beginner 4 medium potatoes
2 tablespoons finely chopped onions
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoon buter
2 tablespoons salad oil1. Pare potatoes.
2. In saucepan, heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling.
3. Add potatoes.
4. Cover; cook 30 - 35 minutes or until tender.
5. Drain; cool slightly.
6. Shred potatoes to measure about 4 cups.
7. Toss potatoes with onion, salt and pepper.
8. Heat butter and oil in 9-inch or 10-inch skillet.
9. Pack potato mixture firmly in skillet, leaving a 1/2 inch space around edge.
10.Cook over low heat 10-15 minutes or until bottom crust is brown.
11.Cut potato mixture into fourths; turn each portion.
12.Add 1 tablespoon salad oil if necessary.
13.Cook 12 - 15 minutes longer or until brown.
Yield: 4 - 6 servings
