Pork Fried Rice

Skill required: Confident cook 4 cups of cooked rice - cold
4 scallions, chopped fine
2 cup Chinese cabbage
3 tablespoons oil
3 eggs, beaten
1/2 lb. Chinese roast pork
salt & pepper to taste
1/2 teaspoon ACCENT
2 tablespoons soy sauce
1/2 teaspoon sugar
1/2 cup chopped parsley1. Heat oil to high temperature.
2. Add scallions and rice.
3. Stir to keep from burning.
4. When well heated, add cabbage and fry, stirring for 5 minutes.
5. Add diced pork and seasonings.
6. Stir well, make depression in center and add eggs.
7. Fry 3 minutes and mix into rice.
8. Sprinkle with parsely and serve.
Yield: 4 - 6 servings
