Risi e Bisi (Rice & Peas)

6 tablespoons butter
1/2 cup finely chopped onion
2 tablespoons finely chopped parsley
1 cup raw regular white rice
1 package (10 ounces) frozen peas
1 teaspoon salt
2 tablespoons grated Parmesan cheese

1. In 4 tablespoons hot butter in heavy 3-quart saucepan, sauté onion and parsley 5 minutes.

2. Add rice; sauté, stirring occasionally, 5 minutes.

3. Add 2 cups water. Bring to boiling; reduce heat, and simmer covered, without stirring - 14 minutes or until liquid is all absorbed.

4. Cook peas as package label directs; drain well.

5. Stir peas, salt and remaining butter into rice.

6. Turn into serving dish; sprinkle top with Parmesan cheese.

Yield: 6-8 servings
