Saffron Rice

Skill required: Beginner 1/4 cup chopped onion
2 tablespoons butter
1 1/3 cups instant rice (Minute)
1 1/3 cups chicken broth (or use 2 chicken bouillon cubes dissolved
in 1 1/3 cups hot water)
1/2 teaspoon salt
Dash of pepper
Pinch of saffron1. Sauté onion in butter until tender but not browned.
2. Add remaining ingredients and mix just to moisten rice.
3. Bring quickly to a boil over high heat.
4. Cover, remove from heat and let stand 5 minutes.
5. Serve with spicy main dish.
Yield: 2 2/3 cups - 4 servings
