Time to prepare: @15 minutes 3 cups packed fresh basil leaves, torn into pieces
1/4 cup pine nuts(optional)
2 garlic cloves
Coarse salt
1/2 cup extra-virgin olive oil
1/4 cup finely grated Parmesan cheese
Freshly ground pepper1. Peel and dice garlic.
2. Combine basil, pine nuts, garlic and 1/2 teaspoon in bowl or food processor.
3. Gradually add olive oil and mix until smooth.
4. Stir in Parmesan cheese.
5. Season to your taste with salt and pepper.
6. Refrigerate left overs.
Yields: @ 1 cup
Good (warm) over penne, ministrone, and cold sprinkled over salad.
