Shrimp & Avocado Salad

Skill required: Beginner 1 package (10 ounces) frozen green peas
1/2 teaspoon salt
1 1/2 cups tomato juice
1 1/3 cups Minute rice
1/2 cup chopped dill pickle - optional
1 teaspoon grated onion
1/8 teaspoon pepper
2 cups (about 1 pound fresh) cooked shrimp, cut in half
1 cup sliced avocado
3/4 cup mayonnaise

tomato wedges1. Cook peas as directed on package. Drain.
2. Combine salt and tomato juice in a saucepan. Bring to boil.
3. Add rice. Stir just to moisten all rice.
4. Cover, remove from heat and let stand 5 minutes.
5. Add peas, pickle, onion and pepper.
6. Mix lightly with a fork.
7. Chill.
8. Just before serving, add shrimp, avocado and mayonnaise; toss lightly.
9. Serve on crisp salad greens and garnish with tomato wedges.
Yield: 6 servings
This is a nice light lunch on a warm day.
