Beef, Mushroom And Barley Soup

1 lb. boneless lean top round steak cut into 1" chunks
3/4 cup pearl barley
7 cups water
3 carrots, chopped
2 onions, chopped
3 celery stalks, chopped
1-1/2 teaspoon salt
1/2 teaspoon fennel seeds (optional)
1/4 teaspoon black pepper
1-1/2 cups thawed frozen lima beans
1-1/2 cups sliced fresh white mushrooms
Dash thyme and parsley

1. Combine beef, barley, and water in a large saucepan; bring to a boil.

2. Skim off any foam, then add the carrots, onions, celery, salt, fennel seeds, pepper, thyme and parsley; return to boil.

3. Reduce the heat and simmer, covered, 45 minutes.

4. Stir in the lima beans and mushrooms; simmer, covered, until the beef is fork-tender, about 15 minutes longer.

Yield: 8 servings
