Onion Soup

4 -5 cups minced onions
3 tablespoons butter
1/4 teaspoon peppercorns, coarsely crushed
1 tablespoon flour
3 cans (10 1/2 ounces each) condensed beef broth
3 cups water
1 bay leaf
6 - 8 slices French bread, toasted
1/2 cup grated Swiss cheese

1. Heat butter in heavy saucepan over medium heat.

2. Add onions and peppercorns.

3. Cook, stirring frequently, until onions are light brown.

4. Sprinkle onions with flour; cook 1 minute, stirring constantly.

5. Add beef broth, water and bay leaf.

6. Bring to boiling; simmer 30 - 40 minutes.

7. Discard bay leaf; correct seasoning to taste with salt and pepper.

8. Turn soup into oven-proof soup tureen.

9. Place toast slices on top and sprinkle with cheese.

10.Place under broiler or in 400 degree oven until cheese turns golden.

Yield: 6 - 8 servings
